Joe Gibson is no stranger to the culinary world in Columbia. Previous to heading up Gregory’s, he honed his skills at Hampton Street Vineyard and Smoked, where he grew from a cook to executive sous chef. It’s evident that his love for food runs deep; Gibson describes his approach to cooking as a “mad scientist” inspired by family recipes, cultural influences from his Florida hometown, and classic French cuisine.

“Meals, to me, have always had this family aspect to it,” Gibson shares. His goal at Gregory’s is to create an atmosphere where diners can feel they are enjoying a cozy meal at home, even when they are out at a restaurant. “When people taste the food, I want them to feel like they’ve been invited to a family gathering.”
