Columbia — A vibrant chapter in Columbia’s cocktail culture is coming to a bittersweet close as renowned bartender Grant McCloskey prepares to leave our beloved city for the bustling metropolis of Philadelphia. After spending more than eight years behind the bar, McCloskey shared the news in a heartfelt social media post on September 6, leaving many patrons and fellow bartenders feeling a mix of loss and excitement for his next adventure.

A Journey Through Local Bars

As a Columbia native, McCloskey has been an integral part of the local drinking scene. Starting his journey at Cafe Strudel in West Columbia back in 2016, he developed his knack for crafting cocktails that would later become a hallmark of his career. His passion transformed him from a novice to a locally celebrated mixologist, helping to elevate cocktail culture in the area.

His most notable role was at Ratio, a small plates restaurant celebrating Peruvian cuisine. Grant not only shaped the bar program but also helped make Ratio a shining star in northeast Columbia despite the challenging circumstances posed by the COVID-19 pandemic. When the restaurant opened in late 2020, he and chef-owner Javier Uriarte quickly became a dynamic duo in the local food scene, introducing creative tapas paired with equally imaginative cocktails.

Excitement for New Challenges

Excitement radiates from Grant as he describes his upcoming move. “I’m excited because it’s another challenge, it’s another opportunity to see where my ceiling is and to push what I’m doing, push myself a lot harder than I am right now,” he told local reporters. This ambitious approach captures the essence of who McCloskey is: always striving for improvement, continually embracing new experiences.

Not Just A Bartender

But he’s not leaving Columbia without making a mark. His influence on the local cocktail scene is undeniable. As he moved to The Hollow, an upscale restaurant in the Vista that serves wild game, he continued to embrace the local mixology culture. His collaboration with owner Chris Fitz at The Hollow has been pivotal, as they worked together to build a cocktail program that reflects Grant’s vision and creativity.

“He really helped drive this city in that direction,” Fitz remarked, emphasizing how Grant’s presence has acted as “glue” connecting various figures in Columbia’s beverage industry.

Beloved by Fellow Bartenders and Customers

Over the years, McCloskey has participated in numerous contests and community events that further cemented his reputation in Columbia. From bartending at the annual Columbia Food & Wine Festival to competing in fun cocktail competitions, he has left a lasting impression on both patrons and fellow bartenders.

As he prepares to pack up his tools and head to Pennsylvania, it’s clear the void left behind by his departure will be felt throughout the community. There’s a sense of gratitude mixed with sorrow among those he’s collaborated with over the years, as they reflect on the vibrant atmosphere he helped create. “He definitely opened my eyes to trying new drinks,” expressed Uriarte, encapsulating the personal touch Grant brought to every interaction.

A Lasting Legacy

McCloskey’s departure might signify an end, but it also opens doors for new talent in Columbia. As he transitions to life in Philadelphia, Grant plans to finish his time at The Hollow, training staff and ensuring their cocktail program is on solid ground before he leaves at the beginning of October.

In the end, while we might say goodbye to a beloved figure in our bar scene, we can be sure that his influence will resonate with cocktails raised in celebration long after he’s gone. Columbia is truly better for the contributions he made, and although McCloskey may be heading to new horizons, his spirit will linger in the glasses we lift and the cheers we make.
