Columbia, S.C. Welcomes Its First Forest-to-Table Restaurant

In the bustling Vista District of Columbia, something fresh and unexpected is taking root. Known primarily for its wide array of restaurants and attractions, Columbia is now playing host to a one-of-a-kind dining experience. The Hollow marks a premiere for the city, serving as its first forest-to-table establishment, with menus providing rustic American cooking.

Rustic Food and Botanical Cocktails

“We’ve been working on this for so long,” stated Chris Fitz, the owner of The Hollow. He expressed gratitude for the overwhelming support from the local community. Unusual offerings such as wild mushrooms, botanical cocktails, and game meat including elk and bison, mark some of the distinctive items on the menu.

Fitz has designed a culinary experience that deviates from the conventional, creating a more primal rendition of dining that takes us back to our roots of hunting and gathering. The dining space mirrors this vision, with vibrant greenery and fairy lights adorning the place, culminating with a large tree centered within the bar.

Inspiration and Celebration

The Hollow drew its initial inspiration from Charleston’s vibrant restaurant culture. Fitz desired to bring something “unique and new” to the Midlands area. The rich traditions of hunting and fishing in the South also influenced the concept. Fitz believes these historical customs will lend comfort and familiarity to customers in this new culinary venture.

The Hollow was warmly welcomed into the community during its ribbon-cutting ceremony. The city of Columbia and its Mayor Daniel Rickenmann celebrated this fresh addition to the Vista District.
