Columbia’s Barbecue Scene: A Culinary Journey Through Global Flavors

COLUMBIA – A Melting Pot of Barbecue Flavors You Can’t Miss

As the sun beams down with an abundance of warmth, hovering at a delightful 83°F, here in Columbia, it’s the perfect weather to grab a bite from one of our local food trucks or restaurants! With a low of 49°F at night, the days invite everyone to enjoy the clear skies and indulge in some of the best barbecue this city offers.

A Flavorful Journey Through Barbecue

The barbecue scene in Columbia is nothing short of a treasure chest filled with flavors from across the globe. Starting with La Cochinita, a beloved food truck where the infamous dish, cochinita pibil, showcases the blend of slow-cooked, marinated pork wrapped in banana leaves. Co-owner Alba Cavazos passionately holds up a plate of the succulent tacos, drizzled with creamy crema and topped with thick-cut pickled onions. “Cochinita pibil is a traditional recipe rich with flavors,” Alba explains, dedication evident in her voice. “We wanted to bring something truly special to Columbia.”

An Intro to Korean Barbecue

Don’t think we’re done just yet! The culinary wizards among us are stepping up their game too. Sean Kim, who first tasted Carolina barbecue in 1994, decided to introduce his own twist by opening MOA Korean BBQ and Bar. Thinly sliced prime brisket grilled right at your table? Yes, please! “When customers come here, they often experience barbecue flavors that remind them of their beloved Southern food while stepping into something new,” he said. Kim wants his guests to embrace the good old Southern vibe while enjoying the novelty of Korean flavors.

The Southern Comfort of City Limits Barbecue

If you’re more of a traditionalist, there’s City Limits Barbecue, where Pitmaster Robbie Robinson delights diners with a tray that offers a little bit of everything! From Carolina chopped pork to Texas smoked brisket, every bite feels like a delicious trip through the American South. “Our barbecue isn’t just about the meat; it’s a cultural experience,” Robinson shares. All the sauces, from tangy mayo-based to sweet vinegar, line the table waiting to complement your meal.

Creating a Taste of Trinidad at Trini Lime

Just when you thought it couldn’t get any better, you come across Trini Lime Caribbean Cafe. Sullange Solomon, the executive chef, manages to incorporate the vibrant flavors of Trinidadian barbecue into her dishes. “For us, barbecue isn’t just about the food; it’s about community and celebration,” she recalls. The barbecued chicken paired with fried rice and chow mein is an absolute crowd favorite and shows how food from her roots offers a nostalgic taste of home to those who grew up with it.

Bringing Cultures Together

The beauty of Columbia’s barbecue scene lies in its incredible blend of cultural influences. The city embraces different styles of barbecue — be it the slow-cooked cochinita pibil or Taiwanese-inspired grilled meats. Chefs here have taken it upon themselves to mix regional flavors, resulting in a delightful dish for everyone. Whether it’s the zesty spices from Latin arrivals or the sweet notes from Caribbean cuisine, each bite has a story to tell.

Community Connections Through Food

For many of these restaurateurs, sharing their culture is as important as crafting the perfect dish. At La Cochinita, Alba and her partner Erika Barbosa not only serve awesome tacos but also engage visitors in the rich stories behind their dishes. “If we can make people curious and excited about food from our culture, we’ve done our job,” Barbosa notes with passion.

A Personal Note

As you roam through our marvelous city of Columbia, let your taste buds take you on a journey around the world, one barbecue sauce at a time. It doesn’t matter if you prefer the classic Southern styles or want to explore vibrant international flavors, there is a dish waiting just for you. So gather your friends and family, and dive into this delicious adventure! Trust us, you’ll find something that makes your heart and palate sing.
